Chef Patrick met his beautiful and bubbly wife, Lubna, while they both worked at Wynn Las Vegas. They share an international love story as both of them have globe-trotted around the world following their dreams to serve others in the most beautiful luxury settings, offering the best products and service one could imagine from their combined experience.

Both Patrick and Lubna followed their hearts and the unique American dream to build their own business in their favorite city in the world, San Francisco, CA, and as small business owners, they bring their knowledge, expertise, love and passion for the most exquisite confections to share with the world… The French Macarons.

The revered and beloved Chantal Guillon is retiring and wanted to ensure her beloved French Macarons in San Francisco and Palo Alto would continue to prosper in the gentle, caring hands of the Lassaque Family; Patrick and Lubna will continue to offer the original recipes, including seasonal favorites.

PATRICK LASSAQUE

Executive Chef and Owner

Esteemed pastry Chef Patrick Lassaque discovered his passion for the culinary arts as a young boy in France.

For over 30 years, Patrick has built his reputation of excellence at the most world renown, luxury resorts the world over. His studies started at the Lycee Hotelier achieving his culinary diploma in Marseille, France, then he apprenticed at the Pastry Boutique. He continued building his reputation internationally in St. Tropez, St. Barts, London, Paris and Nice.

The legendary Chefs Alain Ducasse and Chef Mark Ehrler mentored Patrick in Monaco and Cancun respectively, then Sin City called and Chef Patrick continued building his reputation at such well-regarded resorts as Wynn and Bellagio Las Vegas.

As a citizen of the world, Patrick speaks fluent English, French and Spanish as a reflection of the many major cities he has lived and worked in on multiple continents. As he found the love of his life, his beautiful wife, Lubna, he decided to become a U.S. citizen in 2014 and both are now planning to build their roots here in their favorite city in the world, San Francisco, CA.

LUBNA LASSAQUE

Lubna Lassaque has never met a stranger! When you meet her, you will understand her genuine kindness, charm and enthusiasm contagiously pulls you into her stratosphere of passion for humanity.

As a young girl of 17 in Wales, United Kingdom, she started her career in hospitality over 24 years ago by traveling on her own to work at the Sheraton Hotel in Dubai, then later on at the Starwood and Mandarin Oriental in Boston, Kimpton Hotels in both Boston and New York, ending her ventures at Wynn and Bellagio Las Vegas. Her positions included stints in various Hotel Management positions and New Market Development in Sales.

Her passion for people makes her shine when working on multi-million-dollar events as well as chic boutique bohemian gatherings. She has a solid understanding of how to oversee the daily operations of a successful food and service establishment, including client relations, customer service and personnel management. Lubna Lassaque became a proud United States citizen in 2006.

A LITTLE BIT OF HISTORY

After founding and running two successful companies abroad for 15 years, Chantal moved from Paris to San Francisco in 2008. With her, she brought Chantal Guillon Macarons and Teas to the United States.

Immediately, she fell in love with the most European American city. Rich in culture and diversity, San Franciscans also had a hunger for high-end food experiences. Establishing the Chantal Guillon headquarters in the city was a fit made in heaven.

Chantal Guillon® quickly became known as the must-have French Macaron of the West Coast – combining Parisian tradition with Californian innovation.

Today, Chantal Guillon is known as the first specialized macaron stores of the Bay Area, with stores in San Francisco’s SoMA, Hayes Valley, and in Palo Alto. Online shop to ship US Nationwide.
